Signature Rice Pudding

Rice pudding is one of those desserts that seems simple but hides real technique. The secret? Patience. Slow cooking, constant motion, and a whipped cream that lifts everything at the last moment. It's the contrast between the warm — or cold — sweet rice and the neutral cream that makes all the difference.

Ingredients

  • Short-grain rice: 80 g (risotto type for better texture)
  • Whole milk: 615 ml
  • Sugar: 32 g
  • Vanilla: 1/2 to 1 pod depending on desired intensity
  • Heavy cream 35%: 100 g
  • Toppings: pumpkin seeds, flax seeds, sliced almonds
  • Finish: salted butter caramel — generously, truly.

Method

  1. Infusion and slow cooking In a saucepan, combine the whole milk with the sugar and vanilla seeds. Bring to a boil to dissolve the sugar and release the aromas. As soon as the milk boils, add the rice and immediately lower the heat.
  2. The creaminess secret Cook on very low heat while stirring constantly. This steady motion releases the starch from the rice — that is what creates the natural bind, without any cornstarch or gelatin. Continue until the milk has fully reduced.
  3. The thermal shock Once perfectly cooked, spread the rice on a tray and refrigerate for at least 2 hours. Rapid cooling is essential to preserve the texture of the grains.
  4. The final lightness Whip the very cold cream into chantilly, unsweetened. Gently fold it into the cold rice until you reach the desired creaminess. The contrast between the sweet rice and the neutral cream balances the dessert perfectly.
  5. Plating Plate in a bowl. Sprinkle with seeds and sliced almonds previously toasted in a pan. Finish with a generous drizzle of salted butter caramel. Without restraint.

  • Aromatic variations: cinnamon, cardamom, nutmeg or a clove for a spicier profile.
  • Adjust the sugar to the strength of your caramel — balance is everything.
  • If the rice absorbs all the liquid before it is tender, add a splash of milk and continue.
